Teeling Single Malt Irish Whiskey With a family history in distilling which dates back to Walter Teeling in 1782, it was no surprise when Jack and Stephen Teeling opened a distillery in Dublin in 2015. In fact, the Teeling Distillery is now the first new distillery in Dublin for over 125 years. They wanted to create a contemporary brand, which, whilst looking to the future they ensure to keep an eye on the past. In this way, they can appeal to the modern whiskey drinker, whilst ensuring traditions are honoured. Part of their 'Unconventional Collection', Teeling's Single Malt (made with 100% malted barley) was eagerly anticipated. This is created using an innovative cask maturation from a selection of five wine-cask finished whiskeys - each of which add a quality to the finished blend. They use no chill filtration in it's creation. Cabernet Sauvignon Finish: Red berry, tannic elements midway through the palate Madeira Finish: Brings hints of ginger Port Finish: Stone fruits, plum, apricot Sherry Finish: Brings depth and body with rich dried fruit influences White Burgundy Finish: Subtle tropical fruit influence, pineapple, passionfruit on the nose This results in an Irish Whiskey which delivers a unique and enticing fruit-forward flavour profile. It has aromas of fruit - melon, figs and lemon, all of which come through on the nose as well as a sweetness of toffee. On the palate there are rich dried fruits, vibrant citrus and warning vanilla, spice and cloves. The finish has a length sweetness along with dry tannins from the casks.
